What Is Orange Julius and Its History
Orange Julius is a frozen orange drink that has been popular in North America since the 1920s. The beverage combines fresh orange juice with a creamy, frothy texture that makes it different from standard orange juice. Many people describe it as tasting like a cross between orange juice and a milkshake, with a smooth, velvety consistency.

The drink was invented in 1926 by Julius Freed, a man from Los Angeles who developed the recipe to help sell oranges during the Great Depression. Freed owned a small juice stand, and customers complained that plain orange juice was too acidic and harsh on their stomachs. He experimented with adding various ingredients to make the juice smoother and more pleasant to drink. His solution involved combining orange juice with egg white, milk, sugar, vanilla extract, and ice, which he would blend together. The result became so popular that he opened the first Orange Julius store, and the business eventually expanded across the United States and Canada.
The original Orange Julius recipe has remained largely unchanged for nearly a century, though the chain that bears the name now operates differently than it did in Freed's era. Today, many people prefer making Orange Julius at home because they can control the ingredients, adjust the sweetness level, and save money compared to purchasing it from commercial locations. The homemade version tastes remarkably similar to the original, and you can customize it based on your preferences.
Practical Takeaway: Understanding the history and purpose of Orange Julius helps you appreciate why the recipe includes ingredients like egg white and milk—they were specifically chosen to reduce the acidity of orange juice and create a smoother drinking experience. This knowledge can help you make adjustments to the recipe if you want to modify the flavor or texture.
Gathering Your Ingredients and Equipment
Making Orange Julius at home requires only a few basic ingredients that you likely already have in your kitchen. The core ingredients include fresh orange juice, milk, sugar, vanilla extract, egg white, ice, and water. Some versions also include a small amount of salt to enhance the flavor. The beauty of homemade Orange Julius is that the ingredient list is short and straightforward, with no artificial preservatives, colors, or complex additives.

Fresh orange juice is the primary ingredient and should ideally be freshly squeezed or high-quality store-bought juice without added preservatives or artificial sweeteners. If you use fresh-squeezed juice, you'll need approximately 3 to 4 medium oranges to yield about 1 cup of juice. Store-bought orange juice works well too and offers convenience, though some people notice a slight difference in flavor compared to freshly squeezed. You'll need about 1 cup of juice per serving of Orange Julius.
For the other ingredients, you'll need whole milk (about 1/2 cup per serving), granulated white sugar (1 to 2 tablespoons per serving, depending on your sweetness preference), vanilla extract (1/4 teaspoon per serving), one egg white per serving, ice cubes (about 1 cup per serving), and a pinch of salt. Some recipes suggest using powdered milk instead of liquid milk, which creates a thicker, creamier texture. If you have powdered milk on hand, you can use 2 to 3 tablespoons mixed with a small amount of water instead of liquid milk.
The equipment you'll need is minimal but important for proper preparation. A high-powered blender is essential because it needs to blend ice cubes smoothly and create the characteristic frothy texture. A regular blender will work, though it may take longer and produce less consistent results. You'll also want measuring cups, measuring spoons, a citrus juicer (if squeezing fresh oranges), a spoon for stirring, and glasses for serving. If you're using fresh oranges, a citrus reamer or manual juicer will make extracting the juice easier and more efficient.
Practical Takeaway: Check your pantry before shopping. Most households have milk, sugar, vanilla extract, and access to orange juice already. You likely only need to purchase fresh oranges if you want freshly squeezed juice and possibly eggs if you don't have them. This makes Orange Julius one of the most affordable homemade beverages you can prepare.
Step-by-Step Preparation Instructions
The process of making Orange Julius involves combining ingredients in a specific order and blending them until you achieve the proper consistency and texture. Starting with the correct proportions helps you create a drink that matches the original as closely as possible. For one serving, you'll need 1 cup of orange juice, 1/2 cup of milk, 1 to 2 tablespoons of sugar, 1/4 teaspoon of vanilla extract, 1 egg white, 1 cup of ice cubes, and a small pinch of salt.

Begin by separating the egg white from the yolk. You can do this by cracking the egg into a bowl and carefully pouring the yolk into another bowl while keeping the white in the first bowl, or you can use an egg separator tool if you have one. The egg white is critical to the Orange Julius recipe because it creates the smooth, frothy texture that defines the drink. The yolk is not used in this recipe, so you can save it for another use or discard it.
Pour the orange juice into your blender first, followed by the milk. Add the sugar, vanilla extract, salt, and the egg white. Once you've added all the wet ingredients, add the ice cubes last. This order matters because it helps the blender work more efficiently—the liquid ingredients at the bottom allow the blades to start working immediately, and the ice gets crushed more evenly when it's added last. Start blending on low speed to break up the ice, then increase to high speed and blend for approximately 45 to 60 seconds, or until the mixture is completely smooth and frothy with a light foam on top.
The texture should be thick and creamy, similar to a milkshake but less dense. You should see visible foam or froth on the surface, which indicates that the egg white has been properly incorporated and aerated. If the drink seems too thin, add more ice and blend again. If it's too thick, add a small amount of milk or orange juice and blend briefly. The consistency should be pourable but still substantial enough to feel like a complete beverage rather than plain juice.
Practical Takeaway: The order of ingredients and the blending time are crucial for achieving the authentic Orange Julius texture. Don't skip the egg white or reduce the blending time significantly, as these steps are what transform regular orange juice into the distinctive frothy drink. Always use a clean blender, and rinse it immediately after blending to prevent orange juice from staining the container.
Safety Considerations With Raw Egg White
The use of raw egg white in the original Orange Julius recipe requires careful attention to food safety. Raw eggs can potentially carry salmonella bacteria, which can cause serious illness if consumed in large quantities. However, the risk from consuming raw eggs is relatively low for most healthy individuals when proper egg handling practices are followed. According to the U.S. Food and Drug Administration, the risk of an individual egg containing salmonella is estimated at about 1 in 20,000.

To minimize any potential risk, start by selecting fresh eggs from a reliable source. Check the expiration date on the carton, and store eggs in the refrigerator until you use them. Wash your hands thoroughly before and after handling raw eggs. Use clean equipment and wash your hands again after separating the egg white from the yolk. These basic food safety practices significantly reduce any potential risk of foodborne illness.
If you prefer to avoid raw egg white entirely, you have several alternatives that produce similar results. Pasteurized eggs are heat-treated to eliminate bacteria while remaining raw, and they can be used in Orange Julius without any additional safety concerns. You can find pasteurized eggs at most grocery stores, often labeled clearly on the carton. Another option is to use pasteurized egg white products that come in liquid or powder form, available in the baking section of supermarkets. These products are specifically designed to be safe for raw consumption and work well in frozen drinks.
Some people choose to use whipped egg white from pasteurized eggs or substitute the egg white with a small amount of ice cream or whipped cream for a similar creamy texture without using raw eggs. If you use vanilla ice cream instead of egg white, reduce the milk slightly and omit the sugar, as ice cream already contains sugar and dairy. These alternatives
