Understanding Giblets and Why They Make Quality Gravy
Giblets are the edible organs and extremities removed from poultry during processing. The term typically includes the heart, liver, gizzard, and neck of chickens, turkeys, ducks, or geese. Many people discard these parts without realizing they contain rich, flavorful compounds that create some of the most savory gravies possible. The organs themselves are nutrient-dense, containing iron, B vitamins, and protein that add depth to your sauce.

The reason giblets produce superior gravy comes down to their composition. These organs contain collagen and connective tissues that break down during cooking, releasing gelatin into the liquid. Gelatin naturally thickens gravy and gives it a silky mouthfeel without requiring cornstarch or flour. Additionally, the tissues contain amino acids like glutamate, which contribute umami—that savory, satisfying taste that makes people want more of your cooking.
Turkey giblets are most commonly used in American households, especially around Thanksgiving. A standard package of turkey giblets weighs about 5-8 ounces and typically contains a neck weighing 3-4 ounces, a heart about 1 ounce, a gizzard about 1.5 ounces, and a liver about 1 ounce. Chicken giblets are smaller but equally flavorful. Both types can be found in the cavity of whole birds or purchased separately from most butchers and supermarket meat departments.
The livers in poultry require special attention. Chicken livers have a mild flavor, while turkey and duck livers are stronger and more assertive. Some cooks remove livers before simmering and chop them finely to add near the end of cooking, which prevents them from disintegrating and making the gravy muddy in appearance.
Practical Takeaway: Save giblet packages from whole poultry purchases rather than discarding them. Store them in your freezer until you're ready to make gravy. If buying giblets separately, ask your butcher for organs from fresh birds rather than frozen when possible, as they have slightly better texture.
Preparing Giblets: Cleaning and Initial Steps
Before cooking giblets, they require cleaning to remove any debris or bile residue. Remove the giblets from their packaging and rinse them under cold running water. Pat them dry with paper towels. Inspect each piece carefully—the heart and gizzard should look clean and firm, while the liver should be deep red or brown with no spots or discoloration. If you notice dark spots on a liver, trim them away with a knife as they may contain bile that creates bitterness.

The neck requires the most preparation work. Examine it for any remaining feathers or quills by running your fingers along the skin. If you find any, pull them out or use tweezers. The neck has small bones and cartilage that will soften during cooking and contribute collagen to your broth. Some people prefer to remove the meat from the neck after cooking rather than leaving pieces in the finished gravy, as the small bones can be unpleasant to encounter while eating.
The gizzard is a muscular pouch that contains grit from the bird's diet. It has a thick outer membrane that needs removal. To clean a gizzard, place it on a cutting board and use a sharp knife to cut it open lengthwise. The interior will contain a greyish pouch lined with thick yellow membrane. Under cold running water, scrape away this yellow lining with the back of your knife until you reach the clean, tender meat inside. The cleaned gizzard can be diced for gravy or left whole during cooking.
Some cooks blanch giblets in boiling water for 2-3 minutes before making gravy broth. This initial boiling removes some blood and impurities from the surface, resulting in clearer gravy. After blanching, drain the giblets and rinse them again under cold water before proceeding to the next cooking step.
Practical Takeaway: Dedicate 10 minutes to careful cleaning before cooking. Keep a small bowl of cold water nearby for rinsing your hands and knife as you work. Taking time to properly clean giblets prevents unpleasant textures and bitter flavors in your finished gravy.
Making Giblet Broth: The Foundation of Your Gravy
Giblet broth is the liquid foundation that turns into finished gravy. The process begins by placing cleaned giblets in a medium saucepan and covering them with cold water—approximately 4 to 6 cups of water, depending on how much giblet material you have. Using cold water rather than hot water allows the broth to extract flavors gradually and more completely. Bring the water to a boil over high heat, then immediately reduce the heat to low so the liquid simmers gently.

While the broth simmers, you'll notice foam and impurities rising to the surface during the first 5-10 minutes. Use a slotted spoon or ladle to skim away this grey foam, which improves the clarity and cleanliness of your final gravy. This step separates amateur gravy from professional-quality results. Continue simmering for 45 minutes to 1 hour. The broth should reduce by about one-third and become noticeably darker. You should end up with approximately 3 to 4 cups of rich, amber-colored liquid.
While the broth simmers, prepare your aromatic vegetables. Chop one medium onion into quarters (leave the skin on for color), cut one carrot into chunks, and break apart 2-3 celery stalks. Add these vegetables to the simmering broth during the last 30 minutes of cooking. Include 4-5 whole black peppercorns and 2-3 sprigs of fresh thyme or 1 teaspoon of dried thyme. These aromatics build layers of flavor without overpowering the delicate taste of the giblets themselves.
When cooking time is complete, carefully strain the broth through a fine-mesh sieve into a clean bowl, pressing gently on the solids to extract all liquid. Save the cooked giblets in a separate bowl—you'll chop them later to add back into your finished gravy. Discard the spent vegetables. If any fat has risen to the surface of the cooled broth, you can skim it away, though a small amount of fat helps create richer-tasting gravy. At this point, your broth can be refrigerated for up to 3 days or frozen for up to 3 months.
Practical Takeaway: Make giblet broth while your poultry roasts. This timing means your broth finishes cooking right when your bird comes out of the oven, so everything is ready for final gravy assembly. The broth can also be made 1-2 days ahead, which actually improves the flavor as it develops overnight in the refrigerator.
Creating the Roux and Building Gravy Base
A roux is a mixture of equal parts fat and flour that thickens gravy. It forms the bridge between your thin giblet broth and thick, pourable gravy. After roasting your poultry, pour the pan drippings into a fat separator or small bowl. The fat rises to the top while the meat juices settle below. You need about 3 tablespoons of fat for making gravy. If your poultry didn't produce enough fat, use butter as a substitute.

Heat a medium saucepan over medium heat and add your 3 tablespoons of fat. Once the fat is shimmering and hot, add 3 tablespoons of all-purpose flour, stirring constantly with a wooden spoon or whisk. Cook this roux for 1-2 minutes, stirring continuously. This cooking time removes the raw flour taste and creates a smooth paste. The roux should smell nutty and toasted, not raw or burnt. If your roux is too dark, discard it and start over with fresh fat and flour, as burnt roux will taste unpleasant in your gravy.
Slowly pour your strained giblet broth into the hot roux while whisking constantly. This gradual addition prevents lumps from forming. Pour approximately 1 cup of broth in first, whisking vigorously until smooth and combined. Then add the remaining broth in
